Christy Canyon was discovered in 1984 by a guy named Greg "Rocky" Rome, who was at the time working in the adult entertainment industry, but no longer is. He and Christy had a chance meeting in front of her apartment building. He told her she would be a great model, and so in September, 1984, Christy started modeling. Initially, she did magazines and the first magazine she appeared in was an issue of "Velvet" in 3-D. Christy enjoyed modeling from the start, and later said, "It was pretty cool to see myself in my first layout... no less in 3-D!".

That same year she did her first adult movie. In several interviews Christy has been known to say that her first adult movie was "On Golden Blonde", but that's not totally true. Although it was one of her first feature roles, Christy Canyon's first real appearance in an adult film was in a basically uncredited scene on the "Swedish Erotica #57" video. And, it was a group sex scene with Ron Jeremy and another couple.

Very soon afterwards, she made her first feature video for Paradise Visuals in a video called "Night of Loving Dangerously". This title is no longer available because of the appearance of the underage performer, Traci Lords. Christy immediately followed this video with "On Golden Blonde", also for Paradise Visuals, and her career as a porn star was off to a fast start.

Unschooled in acting and hardly professionally-trained, Christy grew comfortable and quite adept at delivering dialogue in front of the camera as her career progressed. She came on the scene at about the same time as Traci Lords, and the two of them very quickly challenged reigning porn queen Ginger Lynn Allen for the top position in the industry. By 1987, Traci was gone... having left the business after it was discovered she was under 18 when she made most of her films... and Christy Canyon was establishing herself as the #1 fan draw. Despite the fact she has retired, and unretired, many times in the past 15 years or so, her fans remain loyal and devoted. The few films she's appeared in recently were assumed to be "cash cows" by virtue of her appearing in them. Christy and Traci produced several movies together, and after Traci's sudden departure from the business, some of them were re-released with Traci's scenes edited out. One movie that could not be re-released, however, was 1985's, "Battle of the Stars", which pitted Christy Canyon vs. Traci Lords in head-to-head competition for the best actress title in adult films. The move was never released because Traci's scenes could not be edited out.

In a 2005 radio interview, Christy reported that although on-camera she had condom-protected sex with all of her male co-stars during her stint with Vivid Entertainment during the mid 1990s, this was not something she practiced in her private life. Christy claimed she had engaged in unprotected sex with every one of her male co-stars off camera... before their filmed sex scenes. In her personal life, Christy has dated Max Baer, Jr., Robin Williams, directors John Frankenheimer and Adam Rifkin, and Guns'n'Roses guitarist Slash.

In her autobiography, "Lights, Camera, SEX!", Christy notes that Italian porn star, Rocco Siffredi, had attempted several times to add her to his all-star list of sexual conquests. Although initially interested, Christy later changed her mind about sex with Siffredi, who wanted a sex scene between himself and Christy. Siffredi was eventually granted the scene, but Christy retired from Vivid (her second retirement) before the film could be shot.

Currently, Christy is retired from performing in films, but still has an adult-related career, concentrating on her web site, ChristyCanyon.com, working as a host for Playboy Radio, and selling her own merchandise on eBay. Some of her movies and scenes have been re-released in a nice selection of compilation titles, such as... "Christy is Back" and "Christy: My Favorite Scenes". In 2003, Christy published her autobiography, "Lights, Camera, Sex", and in 2003 it had been been reported she was working on a second autobiography titled, "Danger, Curves Ahead". In November 2005, Christy appeared as a judge on the first episode of "Jenna's American Sex Star".
